Khanfaroosh Recipe
Khanfaroosh is a Traditional sweet that is known in the Gulf countries. We all enjoy eating it like candy, each piece following another. Khanfaroosh looks like a mini cake that tastes good! A medium gold cake color as bright as the sun which is eye -catching. The texture is smooth and feels soft as a cloud. Also, it has a strong saffron smell which is earthy, leathery and soft. The smell makes you feel that you want to eat it right away before frying.
This is a recipe that has been passed down in our family from years ago. This recipe was first made by my grandmother, which she took from her mother. Then she taught my older aunties, whereas they began to make small changes in the recipe that will improve the taste. However, my mother started to do the recipe for us since childhood. When we got older we craved it so now it is a must every Friday in our family gathering. We need to have Khanfaroosh on Friday’s as a dessert, and eat it fresh and hot.
Moreover, I was desperate to get to know how to make it. So as I knew the recipe I began to make it from time to time. It became part of our family traditions which my grandmother never imagined that it would be an essential in every family gathering. Everyone who tastes it asks for the recipe which has few ingredients and is all about mixing them together.

Ingredients:
5 eggs
2 cups all-purpose flour (8 fanial / 272 grams)
1/2 cup rice flour (2 fanial / 136 grams)
1 teaspoon saffron (4.2 grams)
1 tablespoon cardamom (14.175 grams)
1 tablespoon baking powder (14.175 grams)
1/2 cup white sugar (2 fanial / 100 grams)
2 tablespoon milk powder (28.35 grams)
2/3 cup rose water (85 grams)
Oil (for frying)
Method:
- In the bowl add all-purpose flour, rice flour, eggs, white sugar and milk powder.
- Then add baking powder, saffron, and cardamom.
- Mix all the ingredients slowly and softly with the whisker till it is a medium thick mixture.
- Slowly pour rose water while mixing to make it a watery light mixture.
- Pour oil in the frying pan till quarter and turn on the oven to a medium fire
- With the spoon, put a small amount of the mixture and carefully start dropping it to the pan
- Flip them till they are gold (medium brown)
- Serve them in a plate from your choice
